Being in US at this point, I used Tilapia to cook this delicious item and it turned out very well. You can also use any fresh water large fish as well. Fried Hilsa (or Ilish macher bhaja in bengali) is a real delicacy item mainly in West Bengal and eastern region of India and also in Bangladesh. Generally the Hilsa (Ilish in Bengali) needs to be fried as a step for preparing other dishes like shorshe bata (with mustard seeds) or Doi Ilish (Hilsa with yogurt). This fried Hilsa can be served with plain white rice, little of oil in which it was fried with salt and whole green chili. The oil is mixed with the rice with little salt and Hilsa is eaten as a side dish with intermittent bites of green chili. Doi Ilish (Hilsa With Yogurt) is a classic Bengali dish very popular in West Bengal. Surprisingly preparation of this dish is really easy and very quick. It’s the eating part which is difficult and time consuming. Thanks to the innumerable fish bones that makes my husband’s life hard to eliminate the bones and have the fish. But still with such challenges he never complains. This dish tastes simply awesome and it is worth every effort to relish this delicacy item. The exquisite taste of Hilsa (Ilish) combined with the simple preparation with yogurt (Dahi) makes the Doi Ilish Recipe (Hilsa With Yogurt) a super duper hit on weekend special lunch days. Considering the time it takes to eat this dish, it is better to plan the preparation on a weekend (Sunday lunch works out the best, followed by a short afternoon nap makes me feel great).

1. To make crispy samosas add 1 teaspoon of rice flour to 1 cup of maida.


2. Put in a pinch of salt in the oil before frying a fish. The fish will not get stuck to the frying pan. Also ensure that the oil is quite warm.
