Kesari Halwa is a “shahi” dessert delicacy which is a great way to end a meal. The preparation of the sweet dish can be adjusted to allow for varying level of sweetness or richness. The Kesari Halwa Recipe is also very simple to prepare and doesn’t take more than 30mins. You can even prepare large quantities and refrigerate for “cool” kesari halwa. Of course some love them warm and soft.

Ingredients

  • 6-7 almonds
  • 2 tablespoons of ghee
  • 1 tablespoon Kaju (cashew)
  • 1 tablespoon kismis (raisin)
  • 1 cup sooji
  • 1/2 cup sugar (upto taste)
  • 3 cup milk
  • 1/2 teaspoon saffron (kesar)

How to prepare Kesari Halwa

Method

Step 1

Take 6-7 almonds and cut them into thin slices.

Step 2

Then take a deep non-stick frying pan, add 2 tablespoons of ghee and make it warm (in low heat). Then add the sliced almond (Step 1), 1 tablespoon Kaju (cashew) and 1 tablespoon kismis (raisin) and fry for 30 seconds.

Step 3

Add 1 cup sooji, 1/2 cup sugar (upto taste) and fry till light brown. Keep stirring constantly.

Step 4

Add 3 cup milk and keep stirring constantly.

Step 5

In the meantime, separately take 1 tablespoon milk in a cup and mix 1/2 teaspoon saffron (kesar) into it and add the mixture to the frying pan and keep stirring till it becomes thick.

Step 6

Finally add 4-5 crushed cardamom (elaichi), mix well and turn off the heat.

Step 7

Kesari Halwa is ready to be served as dessert in lunch or dinner.
