Vermicelli Pulao is a similar type of dish as poha (Cheere) pulao but the poha is replaced with vermicelli (this is also used for sweet dishes as well). This item although is a snacks dish but can be really heavy and keeps the stomach filled for hours. This is even very good for breakfast if prepared with very less quantity of oil.



Ingredients

  • 1 tablespoon ghee
  • Raw peanuts
  • 1 small onion
  • 1 carrot
  • 5-6 beans
  • 1 small potato
  • 1 inch ginger
  • 2-3 green chili
  • 1/2 teaspoon turmeric powder
  • Salt
  • Vegetable oil

Steps

1. In a kadhai heat 1 tablespoon of ghee and put 1 cup vermicelli (break it into approximately into 2 inch threads if you have bought the long ones) into it and fry till it becomes golden brown and keep aside.

2. Take 1 small onion, 1 carrot, 5-6 beans, 1 small potato, 1 inch ginger, 2-3 green chili and chopped all of them into small pieces.

3. In a non stick frying pan put 2 tablespoon of vegetable oil and heat the oil for 2 mins in a medium heat. Put handful of raw peanuts into frying pan and fry until it becomes golden brown and keep aside.

4. In the same oil put all the vegetable (step 2) then add salt to taste, 1/2 teaspoon turmeric powder, handful of green peas and fry for 5 mins until the vegetables become tender and stir occasionally.

5. Put the fried vermicelli into the kadai (step 4) , then mix well and add 1 cup of water into it and fry till the vermicelli become tender.

Vermicelli pulao is now ready to serve for evening snacks or breakfast. This is a great alternate variety of pulao.
