Ingredients
- 4 cups of cooked plain white rice
- 1 red dry chili
- 1 bay leaf
- 2 cloves
- 1 small potato cut into small pieces
- 1 small onion cut into thin long pieces
- 3-4 big florets of cauliflower cut into small pieces
- Half carrot (shredded into thin long pieces)
- Handful of green peas
- A pinch of turmeric powder and red chili powder
- Salt to taste
- Sugar to taste
- Black pepper powder
- 2-3 Green chili (to taste)
- 1 tablespoon Vegetable oil
- 0.5 teaspoon ghee
Preparation Time: 10mins
Cooking Time: 20mins
Serves: 2
How to prepare pulav from leftover rice
1. Moisten the rice with sprinkling water if it was kept in refrigerator
2. Add 1 tablespoon of vegetable oil in a kadhai (deep non-stick cooking bowl) and heat for 2mins
3. Mix the potato and cauliflower pieces with a pinch of turmeric, salt and red chili powder and fry till golden brown, keep aside
4. If required add a little more oil to the same kadhai and add dry chili, bay leaf and clove and stir for 2mins
5. Add a little sugar, green chili split into longitudinal sections with onion and fry till light brown.
6. Add the fried potato and cauliflower, carrot and green peas and stir till the mixture is soft and cooked.
7. Finally add the rice (step 1) to the mixture and also add ghee before mixing well with enough salt (to taste)
8. Sprinkle with black pepper powder and optionally garnish with chopped coriander leaves.
Vegetable pulav is ready serve hot for lunch or dinner with tomato ketchup. No side dish required!
