Stuffed Capsicum is a great vegetarian recipe with stuffing consisting of a whole lot ingredients to make this dish an awesome side dish. The looks of this dish is a treat in itself. Although the list of ingredients might require a trip to the grocery store, the looks, taste and specialty factor of this Stuffed Capsicum (Vegetarian) Recipe are worth a try. Experiment with the amount of masala to use in the stuffing depending on the level of required spiciness.Ingredients
- 8 green Capsicum
- 6 tablespoon of vegetable oil
- 1 big size chopped onion
- 3 medium size potato
- 1/4 teaspoon turmeric powder
- 2 inch grated ginger
- 2 teaspoon garam masala
- 1/2 teaspoon red chili powder
- 1 teaspoon black pepper powder
- Handful of green peas
- grated cheese
- 2 tomato
- Salt as per taste

How to make Stuffed Capsicum
1. Take 8 green Capsicum, wash it properly and cut off the top portion of capsicum and scoop out all the seeds.
2. Boil the Capsicum in enough water on a medium flame till they are fully tender. Then remove them and drain the excess water and let them to get cool.
3. In a micro-wave oven boil 3 medium size potato in enough water for 8 mins and handful of green peas for 3 mins (you can also boil them using boiling water). Drain the excess water, peel off the skin of potato and mash them together.
4. Take a non-stick frying pan, heat 2 tablespoons of vegetable oil and put 1 big size chopped onion with salt to taste and 1/4 teaspoon turmeric powder and fry till it become golden brown in color.
5. Now put 2 inch grated ginger fry it for 1 min, then put 1 tomato sliced with 1 teaspoon garam masala, red chili powder and black pepper powder with little water and fry for 2-3 mins.
6. Put the boiled mash potato and green peas mixture (step 3) and mix it well and cook for 3-4 mins. Remove the stuffing and keep aside.
7. Take the boiled Capsicum and put the stuffing into it.
8. Take a frying pan heat 4 tablespoons of vegetable oil and fry the stuffed capcium an all sides till it become little brown in color.
Garnish with grated cheese and little fried tomato pieces (remaining 1 tomato pieces).
Stuffed Capsicum is ready to serve hot with Plain Rice/Paratha as side dish.
