How to make Spicy Egg Maggi
1. Take 1 medium size onion, 1 carrot, 3-4 beans, 1/2 cup cabbage, 2-3 green chili and chopped all of them into small pieces. Alternatively you can simply use the frozen mixed vegetable packets (of course the taste will not be as good as fresh ones)
2. In a non-stick pan, heat 1 teaspoon of vegetable oil and put 1 beated egg with little salt and cook in low flame till both sides become brown in color and cut the fried egg into small pieces.
3. Take a non-stick frying pan, heat 2 tablespoon of vegetable oil and put chopped onion first and fry for 3-4 mins, then put the remaining vegetable of step 1, handful of green peas, salt to taste and close the lid of the pan and cook for 10 mins. Stir in every few mins.
4. When the vegetables are fully cook put maggi masala, pinch of ajina motto and fry for 1 min. Then put 1.5 glass water into the pan (step 2) and bring it to boil. Add 1 packet of maagi noodles into it and boil till the noodles are fully tender. Add more water if required, because gravy makes the maggi preparation easy to eat (some people like to have dry version – you will just need to add less water and cook for a longer duration)
5. Put the small pieces of fried egg (step 2) into pan (step 4), 2 tablespoon of chili sauce, 2 tablespoon of tomato sauce, and 1 teaspoon of black pepper. Mix well.
Spicy Egg Maggi is ready to serve hot with Potato chips or fried potato (try this, you will love the combination). You can also garnish the spicy maggi preparation with long slices of onions and chopped coriander.
