Shahi Pulao (Pulav) made with basmati rice is a perfect main dish on special occasions and/or parties. This goes with any veg or non-veg side dishes. There are many preparation for a standard Pulao, but this one is completely custom, tried and tested multiple times (of course improved after each tries). Actually you can be very creative with Pulao by adding various “scented” spices. Try this one and post your comments if you have any alternate recipes.


Ingredients

  • 2 cups of basmati rice
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 cardamoms splited into half
  • 2 sticks of cinamon broken into half
  • Handful of green peas
  • Some cashew nut
  • Some rasin
  • Few drops of rose water
  • Ghee

Cooking time : 30 mins
Preparation time : 10 mins
Serves: 4

How to Prepare Shahi Pulao

1. Take 2 cups of basmati rice and wash them properly, soak in water for 30 mins.

2. Then put the rice (step 1) into the rice cooker with 4 cups of water.

3. Then in the rice cooker put 1/2 teaspoon salt, 1/2 teaspoon sugar, 2 cardamoms splited into half, 2 sticks of cinamon broken into half, handful of green peas, some cashew nuts, some rasin and few drops of rose water, mix well and wait till it is automatically cooked.

4. In a non-stick kadhai heat 2 tablespoon of ghee, put 1 medium size onion cut it into thin long pieces, little salt and some whole black pepper and fry till the onion is tender.

5. Put the stuff (step 4) over the cooked rice (step 3) and mix well.

Without Rice Cooker

1. Take 2 cups of basmati rice and wash them properly, soak in water for 30 mins.

2. Boil 2 cups of basmati rice in 8 cups of water in a container and boil until it is fully cooked and drain the excess water. Put few drops of rose water over the cooked rice and keep aside.

3. In a non-stick kadhai heat 3 tablespoon of ghee, then put 2 sticks of cinamon broken into half, 2 cardamoms splited into half, 1 medium size onion cut it into thin long pieces, handful of green peas,1/2 teaspoon salt, 1/2 teaspoon sugar and some whole black pepper and fry till the onion is tender

4. Put the stuff (step 3) over the cooked rice (step 2) and mix well.

The Shahi Pulao is ready as a delicious main dish that will go with variety of side dishes.

Bonus Tip: If you are preparing a large amount of pulav, then you have to cook the rice twice. In such situations, you can put very little turmeric powder in one round of rice preparation and then mix it with the other (white) half to add a little bit of color to the item. Refer to the photo to get an idea of how it will look like.
