Aloo Ki Sabji is perhaps the most cooked and most common recipes of all. In fact this dish is a life-saver when there’s not much ingredients left in the kitchen inventory (and of course the time is too lazy to go out for a grocery shopping). Moreover Aloo Ki Sabji can be served with almost any main dishes – roti/chappati, paratha, puri, kachori, dal puri, rice with dal and even bread. As you can see this dish is a multi-purpose side dish with minimum ingredient and fairly quick and easy to prepare. You can even vary the level of spices and chili to make it quite tasty (of course at the expense of being “healthy”). You will just need potato and onion besides few spices. That’s all. And with pressure cooker, the total time of preparation/cooking is well within 20mins.



Ingredients

  • 2 medium size potatoes
  • 1 big size onion
  • 3 tablespoon of vegetable oil
  • 2 cloves
  • Pinch of whole cumin seeds
  • 2 small bay leaves
  • 2 dry red chili broken into half
  • Pinch of hing (Asafoatida)
  • 3-4 whole black peeper
  • 1 inch of cinnamon stick
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon ginger garlic paste
  • Salt to taste
  • 1/4 teaspoon garam masala powder
  • 1/2 cup of water

Preparation Time: 5 min
Cooking Time: 15 min
Serve: 2

How to make Aloo ki Sabji

1. Take 2 medium size potatoes, peel off the skin and cut each potato in 8 equal parts, wash them properly in the running water.

2.  Cut 1 big size onion into thin long pieces and keep aside.

3. Take a pressure cooker heat 3 tablespoon of vegetable oil and put 2 cloves, pinch of whole cumin seeds, 2  small bay leaves, 2 dry red chili broken into half, pinch of hing (Asafotida), 3-4 whole black peeper, 1 inch of cinnamon stick and fry for 1 min (in the pressure cooker itself).

4. Now put potato pieces (step 1) with 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, 1/2 teaspoon of ginger garlic paste, Salt to taste, 1/4 teaspoon of garam masala powder into the pan (step 3) and fry for 3-4 mins.Then put onion pieces (step 2) and fry for another 2 mins.

5. Close the lid of the pressure cooker with 1/2 cup of water into it and wait for 3 whistles. When the pressure cools down, open the lid of the pressure cooker and put 1/2 teaspoon of ghee over it and cook for 1 min.

Aloo ki Sabji is ready to serve hot with Roti, Paratha or Rice for dinner/lunch.
