
Pav Bhaji is a great item to have in snacks and heavy enough to even complete dinner with more pav (breads). The bhaji (vegetable) is really tasty (sour and spicy) and will tickle you tastebuds enough to finish every bit of it from the bowl. There are various ways to prepare the bhaji, the one written here is the easiest and yet the most tasty one. The pav is nothing but hamburger breads available in bakery.
Ingredients
- 1 potato
- 1 carrot
- 4-5 pieces of cauliflower
- 5-6 pieces of beans
- 3-4 green chili
- 1 onion
- 1/2 cup matar
- 1/2 teaspoon turmeric powder
- 4 tablespoons vegetable oil
- 1 teaspoon gram masala powder
- 1/2 teaspoon garlic
- 1/2 ginger paste
- 1/4 teaspoon red chili powder
- 1 teaspoon lime juice
- 4-5 teaspoon tamarind water

Steps
1. Cut 1 potato, 1 carrot, 4-5 pieces of cauliflower, 5-6 pieces of beans, 3-4 green chili, 1 onion.
2 Boil Potato, carrot, cauliflower, beans in micro-oven for 5 mins.
3. In a mixer grinder put carrot, cauliflower, bean, green chili, onion and little water and blend it.
4. In a pressure cooker boil 1/2 cup matar with salt to taste, 1/2 teaspoon turmeric powder and 2cups water and boil till it becomes tender.
5. Take a non-stick frying pan heat 4 tablespoons vegetable oil, then add paste of vegetable (step 3) boil matar, 1 teaspoon garam masala powder, 1/2 teaspoon garlic, 1/2 ginger paste, 1/2 teaspoon turmeric powder, 1/4 teaspoon red chili powder and fry till oil comes out of it.
6. Add 1 teaspoon lime juice, 4-5 teaspoon tamarind water into the pan (step 5), then cut the boil potato into small pieces and put into the pan (step 5).
7. Mashed well all the contents of (step 5) with wooden stick so that bhaji becomes smooth.
8. Take 4 pieces of bun bread (hamburger breads) and toast both side of it either in toaster or on frying pan, put butter slices in the middle of bread and little butter on the top of the bread too.
Pav bhaji is ready to serve for evening snacks or early dinner.
Note: Bhaji is mainly sour in taste, so taste the bhaji while preparing if it require more sour add few more teaspoon of tamarind water.
Garnish with black salt powder, coriander powder, sev (bhujia) and 1 teaspoon butter.
