Kata Namkeen (Nimki) is an excellent item to serve with evening tea/coffee (almost irreplaceable). Of course you can always buy ready-made stuff but there’s simply no comparison with crispy home made namkeen. Ingredients
- 1 cup maida ( All purpose flour)
- 1/2 teaspoon ajwain
- Vegetable oil
- Salt

How to make Namkeen
1. In a bowl put 1 cup maida (All purpose flour), salt to taste, 1/2 teaspoon ajwain, 2 tablespoon vegetable oil and mix well, then put little by little water and make a soft dough.
2. Make the dough into medium size ball and roll the dough into 6 inch thin round shape circle, then cut it diagonally with knife at the distance of 1 inch (approx) in all over the dough, then cut it again in the reverse order (diagonally). See the reference photos below



3. In a non stick pan heat 1 cup of vegetable oil, then fry the namkin till it become little brown. Keep it in a tissue paper so that extra oil will be soaked.
Kata Namkeen is ready to serve with tea or coffee as evening snacks.
