How to make Gatte Ki Sabji
1. In a bowl put 1 cup besan (gram flour), 1/2 teaspoon turmeric powder, 3-4 chopped green chili, salt to taste and add little by little water to make a not-so-thick batter.
2. Take a non-stick frying pan and heat 2 teaspoon of vegetable oil, put the batter (step 1) into the pan and stir continuously till the gatta ( besan) absorbs water and become thick.
3. Put the batter into a plate and make a thin round shape with hand by pressing it and allow to cool for 30 mins.
4. Cut the round shape batter with knife at the distance of 1 inch (approx) in all over the dough, then cut it again in the reverse order (diagonally). See the reference photos below

5.In the same non stick pan heat 1 cup of vegetable oil, then fry the gatta (besan) till it become little brown. Keep it in a tissue paper so that extra oil will be soaked.
6. In another pan heat 1 tablespoon of ghee and put pinch of whole cumin seeds then after 1 min put pinch of Asafoetida powder,1/2 teaspoon red chili powder, 1/4 teaspoon turmeric powder, salt to taste and immediately add 1 cup yogurt (mix with 2 teaspoon of sugar) and allow to cook for 5 mins.
7. Add 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder and 1/2 cup of water and bring to boil for 2 mins, then put fried gatta (step 5) into the pan and cook for 1 min.
Gatte Ki Sabji is ready to serve hot with Roti or Paratha for dinner.
