Ingredients
- 3 Eggs
- 1 small onion
- 4 inch cucumber
- 1/2 capsicum
- 2-3 green chili
- 5-6 drops of lime
- coriander leaves
- 1/2 teaspoon black pepper
- 4 teaspoons of vinegar
- 1 cup of maida (All Purpose Flour)
- Chilli sauce
- Tomato sauce
- Vegetable oil
- Salt to taste

How to make Home Style Egg Roll
1. Take 1 small onion, 4 inch cucumber, 1/2 capsicum ( medium size), 2-3 green chilli and few coriander leaves.
2. Slice the onion, cucumber and capsicum into thin long pieces. Cut the chilli and coriander leaves into small pieces.
3. In a non-stick frying pan put 4 teaspoons of vinegar and heat for 1 min, then add sliced onion and capsicum and fry until they become little tender (approx 2 mins).
4. In a plate put little fried onion and capsicum (step 3), cucumber, green chilli, coriander leaves (all in step 2) and mix well with 5-6 drops of lime. salt to taste and 1/2 teaspoon black pepper and keep aside.
5. In a bowl break 1 egg and beat the eggs properly and keep aside. 1 egg is for 1 roll you can use 1 egg for 2 rolls or 2 eggs for 3 rolls depending on the size of the paratha (and your taste).
6. In a bowl put 1 cup of maida (All Purpose Flour), 2 teaspoons of vegetable oil and mix well with hand. Then add little by little water and make a normal dough (not very soft) and keep aside.
7. Make the dough into small size balls and roll the dough into 5 inch round shape circle.
8. Take tawa or flat non-stick pan and heat for 2 mins, then put the paratha (step 7) on tawa. When one side of paratha turns little brown, flip the paratha on other side and wait till the other side of paratha also become little brown in color. Add 1 teaspoon of oil in the sides of paratha and try to spread all over the pan. Then put 1 beated egg over the paratha and cook in medium flame till the bottom side becomes crispy and egg become thicken on upper side, flip the paratha on other side and put 1 teaspoon of vegetable oil on the sides of paratha and cook till egg become little brown in color or egg is fully cooked.
9. Press the Paratha with wooden stick while cooking on both sides. So that all the portion gets cooked equally.
10. When the paratha is fully cooked put it on a plate and put Salad mixture (Step 4), chilli sauce, tomato sauce on the paratha diagonally and roll the paratha over tissue paper.
Egg Roll is ready to eat for evening snacks. You can roll it on tissue paper and fold at the bottom so that the content from inside does not fall off while eating. This also gives it the perfect street food look. These are actually quite heavy and if you eat two it will surely serve as dinner.
