Ingredients
- 4 ring pieces of Hilsa
- Little salt
- 1 teaspoon turmeric powder
- 1.5 teaspoon of red chili powder
- 1/2 teaspoon garlic paste
- 4 green cardamom seeds
- 5 cloves
- 2 inch cinnamon stick
- 4 tablespoon of mustard oil
- 2 bay leaves
- 1 dry red chili
- 1/2 teaspoon ginger paste
- 5 table spoon yogurt
- 1 teaspoon of sugar

How to make Doi Ilish (Hilsa With Yogurt)
1. Take 4 ring pieces of Ilish (Hilsa) wash it properly and marinade with little salt, 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder, 1/2 teaspoon garlic paste and keep aside for 30 mins.
2. Slightly crush 4 green cardamom seeds, 5 cloves, 2 inch cinnamon stick and mix together.
3. Take a non-stick frying pan heat 4 tablespoon of mustard oil and put the mixture above (step 2) into the oil and immediately put 2 bay leaves broken into half and 1 dry red chili broken into half. Fry the masala for 1 min.
4. In a bowl put 1/2 teaspoon of ginger paste, 1 teaspoon of red chili powder, 1/2 teaspoon turmeric powder, salt to taste and little water to make a paste. Put the paste into the pan (step 3) and fry for 3-4 mins. The oil may splatter, so be careful.
5. Take another bowl and put 5 tablespoon yogurt with 1 teaspoon of sugar beat many times so that when you pour the mixture from top its falls in one thread. Put the mixture into the pan (step 3) and fry for another 3-4 mins.
6. Now put the Ilish (Hilsa) pieces into the pan (step 3) and close the lid of the pan . After 5 mins turn over the hilsa pieces and cook for another 5-8 mins till the Hilsa is fully cooked. Check with a fork that the Hilsa is fully cooked or not by poking the fish.
7. Add water into the pan (step 3), if the gravy sticks at the bottom of the pan, but do not add more water because the gravy is usually thick in this recipe.
Doi Ilish (Hilsa With Yogurt) is ready to serve only with Rice for lunch.
