Baigun Muli ki Sabji is an “everyday” recipe ideal for dinner with roti/chappati. This is a vegetarian healthy dish and can be prepared as a break after a party with rich items. Although the Muli Baigan Recipe is a traditional one, you can try to accompany the item with chanachur, sev or any other spicy snack items.Ingredients
- 1 medium size baigun ( brinjal/egg plant)
- 2 muli
- 2 potato
- 4-5 tablespoon of vegetable oil
- 2 dry red chili
- pinch of panch phoran
- 1/2 teaspoon turmeric powder
- salt to taste
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garlic paste
- 1/2 teaspoon garam masala
- 1/2 cup water

How to make Baigun Muli ki Sabji
1.Take 1 medium size baigun ( bringal/ egg plant) and 2 muli, cut it into thick medium size pieces, then take 2 potato do not peel off its skin and cut it into medium size pieces. Wash all the vegetable in running water.
2. Take a non-stick frying pan, heat 4-5 tablespoon of vegetable oil and put pinch of panch phoran, 2 dry red chili broken into half. when its starts splutter put potato pieces with little salt and little turmeric powder fry till it become little brown in color.
3. Now put baigun (brinjal) with salt to taste, 1/2 teaspoon turmeric powder and 1/2 teaspoon red chili powder and fry till baigun is half tender. Put muli pieces into the pan and cook for 5 mins in medium flame.
4. Put 1/2 teaspoon garlic paste and 1/2 teaspoon garam masala and cook till all the vegetables are fully tender.Add 1/2 cup water and bring it to boil for 3-4 mins.
Baigun Muli ki Sabji is ready to serve hot with Roti or Paratha.
