Aloo Kathal ki Sabji (Jack fruit with potato) is a simple vegetable side dish that tastes really good and similar to non-veg preparations. But overall preparation time of this vegetarian dish is near to 1 hour. So plan ahead before starting to cook this item. Aloo Kathal ki sabji (Jack Fruit with potato) Recipe is a north Indian one and ideal with Roti/chappati. This can be served to guests in dinner (just make it a bit more spicy and add a little more oil).Ingredients
- 500gm Kathal (Jack Fruit)
- 3-4 medium size potato
- 3-4 tablespoon of vegetable oil
- pinch of panch phoran
- 2 dry red chili
- 2 bay leaves
- 1 big size onion
- 1/2 teaspoon cumin powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- 1 teaspoon ginger powder
- Salt to taste
- 1/2 cup of water

How to make Aloo Kathal Ki Sabji (Jack Fruit with potato)
1. Take 500gm kathal cut it in medium size pieces wash it properly, now take 3-4 medium size potato, peel off its skin and cut it in 8 pieces each. Wash it in running water and keep aside.
2. Take a sauce pan put enough water to boil the kathal with litle salt and little turmeric powder till it becomes half tender, then drain the excess water.
3. Take a non-stick frying pan heat 3-4 tablespoon of vegetable oil put the boiled kathal (step 2) and fry with little salt and little turmeric powder till becomes golden brown in color.
4. Then put the potato pieces and fry it with same little salt and turmeric powder till it become brown in color and keep aside.
5. In the same non-stick frying pan heat 2 tablespoon of vegetable oil, put pinch of panch phoran, 2 dry red chili broken into half, 2 bay leaves. When it starts splutter put 1 big size onion cut in into thin long size pieces.
6. Fry the onion with salt to taste and little turmeric powder till it becomes brown in color, in a bowl separately put 1/2 teaspoon cumin powder, 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder, 1/4 teaspoon turmeric powder and 1 teaspoon ginger powder with little water and make a paste.
7. Put the spices paste (step 6) and salt to taste into the pan and fry till oil separates from spices.
8. Then put the fried potato and fried kathal pieces and 1/2 cup of water into the pan. cook it till kathal and potato is fully tender.
Aloo Kathal Ki Sabji is ready to serve hot with Roti or Paratha for dinner/lunch.
