Aloo bhaji (Potato fry) can be prepared in variety of styles, this one in particular, is an extra crispy, extra thin and crunchy style. You will enjoy this aloo bhujia with any simple main dish like daal, rice or khichdi. The preparation is easy too. You can add other goodies (like peanuts) to make this dish unique and tasty.
Ingredients
- 2 medium size potato
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon besan (gram flour)
- Handful of raw peanuts
- Salt powder pinch of red chili powder
- Chopped coriander leaves
- Salt
- Vegetable oil.

Steps
1. Take 2 medium size potato peel off the skin of the potato, grate it (using the usual hand grater available, use the thicker groove) and wash them in running water, then put little salt and 1/4 teaspoon turmeric powder and keep aside.
2. Squeeze the potato (step 1) with hands so that excess water is removed, then put 1/2 teaspoon besan (gram flour) and mix it well.
3.In a non stick frying pan put 2 tablespoon of vegetable oil and heat the oil for 2 mins in a medium heat. Put handful of raw peanuts into frying pan and fry until it becomes golden brown and keep aside.
4. In the same frying pan put 5-6 more tablespoon of vegetable oil and heat it, then put the 1/4th potato (step 2) into the pan and fry till it become little brown and fry the remaining potatoes in 1/4th portion in the same way.
5. In a bowl put the fried potato and mix it with fried peanuts (step 3).
Garnish with black salt powder, pinch of red chili powder and chopped coriander leaves.
Aloo bhaji is ready to serve with Khichdi or rice in lunch.
