Aloo bean ki sabji is a classic “everyday” dish for lunch or dinner. This is an healthy break (normally on weekdays) from spicy preparations that tastes good enough compared to other healthy dishes. You can prepare this green vegetable item once in a while to provide the required nutritional value as well as fiber in a regular diet. You can vary the level of spices to make this spicier but then it will lose the purpose of this Aloo bean ki Sabji Recipe. This is a dry recipe and hence if you are planning to have it with rice, you will need dal accompanied with this.



Ingredients

  • 100 gm bean
  • 1 medium size potato
  • 1 dry red chili broken into half
  • Panch phoran (mixture of 5 spices)
  • 1/2 teaspoon turmeric powder
  • 1 medium size chopped onion
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon coriander power
  • 1/2 teaspoon ginger garlic paste
  • 2-3 green chili split into half
  • Little sugar
  • 2 tablespoon of vegetable oil

Preparation Time: 10 min
Cooking Time: 25 min
Serves: 2

How to make aloo bean ki sabji

1. Take 100 gm bean and 1 medium size potato (peel off skin), cut both the vegetables in medium size pieces and wash them in running water and keep aside.

2. Take a non-stick frying pan heat 2 tablespoon of vegetable oil put pinch of panch phoran (mixture of 5 spices) and 1 dry red chili broken into half, when they start splutter put potato pieces (step 1), salt to taste, 1/2 teaspoon turmeric powder and fry till the potatoes pieces become little brown. Add 1 medium size chopped onion fry till it become half tender, then put beans (step 1) and cook for 5 mins.

3. Put 1/4 teaspoon cumin powder, 1/4 teaspoon coriander power, 1/2 teaspoon ginger garlic paste, 2-3 green chili split into half and little water into the pan (step 2). cook till all the vegetables become tender and gravy become thick, atlast add little sugar to the gravy and cook for 2-3 mins.

Aloo bean ki sabji is ready to serve with Rice, Roti or Paratha for lunch.
