Ingredients
- 1 small baigun (brinjal or eggplant)
- 1 medium size potato
- 7-8 badi (made of urad dal or rice flour)
- A pinch of punch phoran (mixture of 5 spices)
- 1 dry red chili
- 1/2 teaspoon turmeric powder
- 1/4th teaspoon garlic paste
- 1/2 chopped tomato pieces
- Liitle sugar
- 2 tablespoon vegetable oil
- Salt

How to make Aloo Baigun Badi ki Sabji
1. Cut 1 small baigun into thin long pieces and 1 medium size potato into small size pieces (not too small) at first peel off the skin of the potato and wash both baigun and potato into the running water.
2. Take a non-stick frying pan and heat 2 tablespoon vegetable oil then, put 7-8 badi (made of urad dal or rice flour) fry them till it become golden brown. Take them off and keep it in a bowl.
3. In the same pan and in the same oil put pinch of punch phoran (mixture of 5 spices) and 1 dry red chili broken into half. Fry it for 1/2 min, then put potato pieces ( step 1) into the pan and fry till it is little brown.
4. Put the baigun pieces, salt to taste, 1/2 teaspoon turmeric powder and 1/4th teaspoon garlic paste into the pan ( step 3) mix well. Cover the lid of the pan.
5 Put 1/2 chopped tomato pieces into the pan (step 4) and cook it till baigun and tomato is fully tender, mash the baigun with wooden stick. Add little water occasionally if it catches at the bottom of the pan.
6. At last put the fried badi (step 2) and liitle sugar into the pan and cook for 5 mins. Stir it after every few mins.
Aloo Baigun Badi Ki Sabji is ready to serve hot with Roti or Paratha.
